Job description

In general catering practice, bakery and pastry work starts with the production plan. The baker reads the menu, portion numbers and service times before choosing a work order. Bread dough needs time to rise, while pastry fillings may need time to cool. For that reason, starting every item together can create delays later. The baker compares each recipe with available ingredients and usable equipment. Next, the baker checks which components can wait safely and which need finishing near service. A clear sequence keeps oven space and preparation space available for the next product. Any gap in supplies needs discussion with the person directing production before mixing starts.

Once the plan is clear, the baker weighs ingredients against the recipe rather than guessing. Flour, liquid, fat and raising agents each affect the final texture. Before mixing, ingredient temperatures also matter because warm fat behaves differently from cold fat. The baker follows the mixing order and watches how the mixture changes. Bread dough needs suitable strength to hold gas, but pastry can become tough with excess mixing. Therefore, one mixing method does not suit every product. The baker checks texture at the correct stage and avoids adding ingredients without a clear reason. Any approved change should remain traceable so another batch can achieve the same result.

Checks and exception handling

During dough preparation, the baker divides pieces evenly before shaping them for the chosen product. Similar weights help pieces bake at a similar rate and give consistent portions. Next comes proofing, the resting stage when yeast dough rises before baking. The baker watches the dough's size and feel instead of relying only on elapsed time. Room conditions and dough temperature can change the pace of this stage. Meanwhile, pastry may need chilling between handling steps to keep its shape. The baker judges readiness before loading trays, because an early or late move can affect volume and texture.

At the oven, the baker checks the set temperature and leaves suitable space around trays. As a general example, bread tops may brown while the centres remain underbaked. Colour alone does not settle whether the bread is ready. The baker checks the crumb and uses the appropriate temperature check for that product. Then the baker reviews loading, heat settings and baking time before deciding the next action. The baker keeps unsuitable pieces out of service and tells the production lead about any shortfall. A clear update allows the team to adjust service quantities while the baker corrects the cause.

Coordination and completion

After baking, cooling becomes a separate control step rather than an idle waiting period. The baker places products where air can circulate and protects them from contamination. Packing warm bread too soon can trap moisture and soften the crust. Likewise, adding a cream filling to a warm shell can damage its texture and safety. For products that need refrigeration, the baker follows the applicable cooling and storage controls. Before assembly, the baker checks that fillings and baked bases are ready to combine. Clean tools and controlled handling help protect the finished product when no further cooking step will follow.

At finishing, the baker aims for portions that match the planned size and presentation. Decorations should stay secure during handling, and packaging should protect delicate edges or toppings. Before handover, the baker confirms product names and ingredient information with the receiving service staff. This matters because similar pastries can contain different fillings or allergens. The receiving team also needs clear storage guidance and any limits on how long products can remain on display. Finally, the baker separates usable stock from items that cannot return to service. Recording the remaining quantities helps the next production plan reflect actual use rather than guesswork.

Typical Duties & Responsibilities

  • Inspect incoming flour, dairy products and eggs for damaged packaging or spoilage before accepting them into storage.
  • Rotate ingredient stock by its usable dates so older suitable supplies do not remain behind newer deliveries.
  • Check weighing scales before use so measurement errors do not affect a whole production batch.
  • Keep allergen ingredients in identified containers and use separate utensils where needed to prevent unintended mixing.
  • Clean benches, mixers and reusable moulds after use, checking food contact surfaces for remaining dough or grease.
  • Report damaged oven seals, loose mixer parts or unusual equipment noise before a fault affects safe use.
  • Record ingredient waste by cause so the production lead can distinguish handling losses from spoiled stock.
  • Check completed orders against requested quantities and separate them clearly to prevent mixups during collection.

Candidate Profile

Applicants can prepare a truthful example of making consistent tart shells across a large batch. Explain the target portion weight, the actual yield and how you reduced broken shells. If you have photographs or production records you may share, use them to support that account. Do not disclose a previous employer's private recipes or customer details. Also, ask AMWAJ Group to clarify the worksite, product range and production volumes. Discuss how it assesses medical fitness for offshore work, and confirm the schedule and pay before accepting any offer.
